Instructions

- Step 2: Make the mango salsa. While the chicken marinates, combine the diced mango, red onion, chopped cilantro, remaining 2 tablespoons of lime juice, and a pinch of salt in a medium bowl. Stir gently to combine and set aside.
- Step 3: Cook the honey lime chicken. Heat olive oil in a large non-stick skillet over medium-high heat, or preheat your grill to medium-high. Add the marinated chicken and cook for 5-7 minutes per side, or until an internal temperature of 165°F (74°C) is reached and the chicken is nicely caramelized.
- Step 4: Rest and serve. Remove chicken from heat and let it rest on a cutting board for 5 minutes before slicing. Serve the sliced honey lime chicken immediately, topped generously with the fresh mango salsa.
