Description

Savor summer! This Easy Healthy Honey Lime Chicken with vibrant Mango Salsa combines tender marinated chicken with a zesty, sweet tropical topping. Full instructions & nutrition info included.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 3 tablespoons honey
  • 4 tablespoons fresh lime juice, divided
  • 2 cloves garlic, minced
  • 1 large ripe mango, peeled and diced
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil

Instructions

  1. Step 1: Prepare the chicken marinade. In a shallow dish, whisk together 2 tablespoons of honey, 2 tablespoons of lime juice, minced garlic, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add the chicken breasts or thighs, turning to coat evenly. Marinate for at least 15 minutes at room temperature, or up to 30 minutes in the refrigerator.
  2. Step 2: Make the mango salsa. While the chicken marinates, combine the diced mango, red onion, chopped cilantro, remaining 2 tablespoons of lime juice, and a pinch of salt in a medium bowl. Stir gently to combine and set aside.
  3. Step 3: Cook the honey lime chicken. Heat olive oil in a large non-stick skillet over medium-high heat, or preheat your grill to medium-high. Add the marinated chicken and cook for 5-7 minutes per side, or until an internal temperature of 165°F (74°C) is reached and the chicken is nicely caramelized.
  4. Step 4: Rest and serve. Remove chicken from heat and let it rest on a cutting board for 5 minutes before slicing. Serve the sliced honey lime chicken immediately, topped generously with the fresh mango salsa.

Notes

  • Leftover chicken keeps well in an airtight container in the fridge for up to 3 days; for the best flavor and texture, store any remaining mango salsa separately and enjoy it within 1-2 days as its freshness fades quickly.
  • To reheat your chicken, a quick sauté in a lightly oiled pan or a short stint in the microwave on a lower power setting will prevent it from drying out, while the salsa is always best served fresh and cool.
  • Elevate this vibrant dish further by serving it alongside fluffy coconut rice or a simple quinoa salad, or even nestled in soft tortillas for a delicious taco night twist.
  • For the most vibrant salsa, choose a mango that's perfectly ripe and fragrant; if you find red onion too strong, a quick rinse under cold water after dicing can mellow its bite beautifully.
