Description

Elevate your summer cookout with these effortless grilled seafood skewers! Succulent shrimp and scallops, kissed by a vibrant lemon-garlic marinade. Recipe steps and nutritional details await.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 lb large sea scallops, patted dry
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Step 1: Prepare the Marinade and Seafood. In a medium bowl, whisk together the olive oil, fresh lemon juice, minced garlic, chopped fresh parsley, sea salt, and black pepper. Add the peeled and deveined shrimp and patted dry scallops to the bowl, tossing gently to coat all the seafood in the marinade. Cover the bowl and refrigerate for 20-30 minutes; do not marinate for too long.
  2. Step 2: Prepare Skewers and Grill. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your grill to medium-high heat (about 400°F / 200°C). Lightly oil the grill grates to prevent sticking.
  3. Step 3: Thread the Skewers. Thread the marinated shrimp and scallops alternately onto the prepared skewers. Don't overcrowd the skewers; leave a little space between each piece of seafood to ensure even cooking. Discard any remaining marinade.
  4. Step 4: Grill the Skewers. Place the seafood skewers directly on the preheated, oiled grill grates. Grill for 2-3 minutes per side, or until the shrimp turn pink and opaque, and the scallops are firm and cooked through with nice grill marks. Be careful not to overcook, as seafood cooks quickly.
  5. Step 5: Serve Immediately. Remove the grilled seafood skewers from the grill and transfer them to a serving platter. Garnish with extra fresh parsley or lemon wedges if desired, and serve hot as a main course or a delicious appetizer.

Notes

  • Enjoy any leftover grilled seafood skewers within 1-2 days, stored in an airtight container in the refrigerator to keep them at their best.
  • To gently reheat, briefly warm the skewers in a non-stick pan over low heat or in a preheated oven/air fryer until just warm, being careful not to overcook and toughen the seafood.
  • These vibrant skewers pair wonderfully with a light couscous or quinoa salad, or simply alongside a fresh green salad with a zesty vinaigrette for a complete meal.
  • A crucial chef's tip: stick to the recommended 20-30 minute marinating time, as the lemon juice can start to "cook" the delicate seafood proteins if left too long, making them tough instead of tender.
