- 1 tablespoon fresh lemon juice

- Step 1: Prepare chicken and skewers. If using wooden skewers, soak them in water for at least 30 minutes. Cut the chicken breast into uniform 1-inch cubes.
- Step 2: Make the cowboy butter. In a small saucepan or microwave-safe bowl, melt the unsalted butter. Stir in the minced garlic, chopped fresh parsley, smoked paprika, chili powder, fresh lemon juice, kosher salt, and black pepper. Mix thoroughly to combine all ingredients.
- Step 3: Coat and skewer the chicken. Place the chicken cubes in a medium bowl. Pour about half of the prepared cowboy butter mixture over the chicken, tossing gently to ensure each piece is evenly coated. Thread the chicken cubes onto the soaked skewers.
- Step 4: Preheat and oil the grill. Preheat your grill to medium-high heat (around 400°F / 200°C). Lightly oil the grill grates to prevent the chicken from sticking.
- Step 5: Grill the chicken skewers. Place the chicken skewers on the hot grill. Cook for 10-14 minutes, turning every 3-4 minutes, until the chicken is cooked through and has an internal temperature of 165°F (74°C) and visible grill marks.
- Step 6: Baste and serve. During the last 3-4 minutes of grilling, generously baste the chicken skewers with the remaining cowboy butter mixture. Remove from the grill and let rest for 5 minutes before serving hot.
