- 4 cups seedless watermelon, cut into 1-inch cubes
- 1 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 1/4 small red onion, very thinly sliced (optional)
- 2 tablespoons fresh lime juice (from 1 large lime)
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon sea salt, or to taste
- 1/8 teaspoon black pepper, freshly ground
Instructions
- Step 1: Prepare the main ingredients by dicing the seedless watermelon into 1-inch cubes. Crumble the feta cheese and finely chop the fresh mint leaves. If using, thinly slice the red onion.
- Step 2: In a large serving bowl, gently combine the cubed watermelon, crumbled feta cheese, chopped mint leaves, and thinly sliced red onion.
- Step 3: In a small separate bowl, whisk together the fresh lime juice, extra virgin olive oil, sea salt, and freshly ground black pepper until well combined. This will be your dressing.
- Step 4: Pour the dressing evenly over the salad ingredients in the large bowl. Gently toss the salad to ensure all components are lightly coated with the dressing.
- Step 5: Serve the watermelon feta salad immediately for the freshest taste, or chill in the refrigerator for about 15-20 minutes before serving.
